「食在廣州，廚出鳳城」，後句是對順德人廚藝精湛的讚揚，生於廣州的鼎爺亦稱歎過不少鳳城名菜！來到順德，他卻先帶阿譚參觀酒廠，原來地道特產紅米酒竟是用肥豬肉釀造？紅花蟹殼薄、肉甜，易於掌握火候。鼎爺以紅米酒炮製「醉蟹」，阿譚卻疑惑為何不選用紹興酒？鼎爺還在合蓋鍋邊淋酒做出火焰效果，盡顯功架！他又找來蔗渣入饌，莫非真的能夠「以蔗渣價錢煮出燒鵝味」？香脆出品「酸甜炸蔗渣」背後，還有一段廚師戲弄僱主的趣事。
